Healthy grain-free mediterranean tortilla pizza in just 10 minutes!

If you want a clean, veg-filled, light  and delicious bite - this grain-free mediterranean plant-based pizza is a must try and a favorite of mine.

I caught a craving for this recently, but felt inspired to change it up a bit so I went with a mediterranean-inspired version. 

Made with chickpea flour tortillas, tomato sauce, red onion, zucchini, kalamata olives, garlic, herbs and a bit of plant-based cheese - this pizza is one of my favorite recipes in a while. 

Here’s what I love about it - 

  • The amount of flavor is really satisfying, especially considering how light, clean and healthy it is. 

  • Kalamata olives are a great source of healthy fat, iron, calcium, vitamin A and E, and rich in oleic acid, which is said to improve heart health and contain cancer-fighting properties. They also offer a lot of flavor. 

  • It’s light enough to eat as a snack, but great as a meal too - just top it up with more veggies if you want something really filling, or make two if you’re really hungry!

  • Zucchini is filled with important vitamins, minerals and other essential nutrients, and it’s very easy to digest so it won’t cause much bloating.

  • It takes less than 10 minutes to make, and it’s super versatile (read more on this below).

As you can see, there’s a lot that I love about this dish, which is why I made it a bunch of times this week - each time a little bit different.

First, I made a standard pizza like you see posted here. 

Next, as a sort-of taco sandwich because it cracked in half on my first bite (I left it in the oven a tad too long).

Finally, as nachos on a bed of arugula because I wanted some leafy greens. 

The good news is: Every version was as delicious as the last.

So on top of being incredible tasting, quick and easy to make, light, clean and nutritious…it’s also super adaptable!

So enjoy and have fun with it. And definitely don’t be discouraged if it breaks or cracks, since there’s all sorts of ways to tackle this dish.

Grain-free mediterranean tortilla pizza

Prep Time: 5 minutes | Cook Time: 10 minutes

Ingredients:

  • 1 tsp avocado oil

  • 1 grain-free tortillas

  • 2 tbsp tomato sauce

  • 1/4 cup shredded plant-based cheese

  • 1/4 of a small zucchini, thinly sliced

  • 1/4 of a small red onion, thinly sliced

  • 2 tbsp kalamata olives, halved

  • 1 garlic clove, minced

  • small handful of fresh herbs such as oregano, parsley and basil

  • salt and pepper to taste

Directions

  • Preheat oven to 350 degrees.

  • Brush both sides of tortilla with avocado oil and bake for 5 minutes in the oven.

  • Carefully remove tortillas from the oven, allow to cool for 1-2 minutes. Keep oven on.

  • Spread a thin layer of tomato sauce onto the tortillas, sprinkle with cheese and top with vegetables, olives, garlic, herbs, salt and pepper.

  • Place the tortillas back in the oven and cook for an additional 5 minutes.

  • Remove from oven, allow to cool and eat with both hands instead of trying to slice it (it won’t break this way).
