Easy, creamy and oil free lemon dijon dressing
I’ve been getting a lot of inquiries lately about meal planning. Specifically, if and how I practice meal prepping for the week.
To be honest, I don’t do a ton of meal prepping. Since both me and my husband work from home, we don’t often need to have our meals prepared in advance unless it’s a busy week and were both out of the house a lot. For the most part, we have time in the morning and throughout the day to prepare a quick and nutritious meal if we need to.
That being said, there are a few items I make in batches consistently. And one of them is salad dressings and sauces. For some reason I find these hugely inconvenient to prepare in real time and since I am always eating some type of bowl or salad, I like to have at least one type of dressing on hand that I’ve already prepared that I can just throw on top.
With that in mind, this week I’m sharing one of my favorite dressings for the spring/summer season, since it’s super light, refreshing and full of that citrus, tangy goodness. I love to pair it with just about any fresh vegetable salad, though it’s especially delicious when paired with shaved radishes and carrots, grilled asparagus or avocado.

Easy Oil Free Lemon Dijon Dressing
Prep Time: 30 minutes | Cook Time: 2 minutes | Yields: 1 cup
Ingredients
2 cloves garlic
1 lemon, juiced
1/4 cup apple cider vinegar
2 tbsp dijon mustard
1/4 cup cashews, soaked
1 tbsp maple syrup
1 tsp salt and pep
Directions
Soak cashews, for at least 30 minutes. Drain and rinse.
Combine all ingredients in a high speed blender. Start to blend on a low to medium speed and slowly increase to the highest speed until ingredients are mixed well and the dressing is completely smooth.
