DIY superfood stuffed dates are the perfect natural, healthy snack or dessert

I love a fresh date. 

If you ask me, they’re the perfect snack - packed full of important nutrients and will totally satisfy even the most persistent sugar craving. 

From a health perspective, they’re incredible - 

-packed with nutrients, such as fiber, vitamin B6, and folate (just to name a few).

-high in antioxidants, which protect your cells from free radicals that wreak havoc on the body and lead to disease.

-can help regulate blood sugar, due to their low glycemic index; keeping blood sugar levels within a safe range is super important for maintaining a healthy weight and mitigating risk of diabetes, heart disease and other chronic diseases.

-a preferred natural sweetener, that won’t lead to inflammation in the body like refined sugars and easier to digest than sugar alcohols, which can cause bloating and discomfort. 

The more I eat dates, the more I love them and love to explore all of the different ways to use them. 

I love them in energy bars and balls, smoothies, oatmeal, and to sweeten sauces, dressing and marinades.

But my absolute favorite thing to do with a date is to stuff it with superfoods and store it in the fridge for a quick snack or healthy dessert.

The combinations are truly endless when you consider all of the nut and seed butters and toppings you can piece together.

The one I’m sharing here is my favorite as of late, and very deserving of it’s own slice of internet real estate. 

Made with raw sesame butter, local and fresh strawberry preserves and chopped nuts and seeds, these superfood stuffed dates are packed with sweet and earthy flavors, are the perfect combination of smooth and crunchy, and make for the most satisfying nutrient dense bite you could ask for in a snack or dessert. 

Here’s how you’re gonna make it:

-Use soft, sticky and sweet dates. They’ve got to be FRESH. 

-Make a bunch at once, store them in fridge (or freezer, if you need to store them for longer) so you’ve got a go-to snack or dessert for the week.

-You just need a just a drizzle of raw sesame butter, to get the essence of the flavor and help neutralize the sweet taste of the dates and preserves.

-Use just a small dollop of preserves on each date; more than this and it’s too sweet. Also, aim for preserves that are locally made, those are always the most flavorful. If you’re concerned about the sugar factor, I’ve got a great homemade option for you here

-Use nuts and seeds with different nutrient profiles to add variety to your nutritional intake.

And there you have it - an easy, healthy, natural snack or dessert made in no-time that will leave you satiated and nourished.

Superfood stuffed dates

Prep Time: 10 minutes | Yields: 5 dates

Ingredients:

  • 5 dates, halved and pitted

  • 2 tbsp raw sesame butter

  • 2 tbsp strawberry preserves

  • 2 tbsp raw nuts of choice, finely chopped into very small pieces

  • 1 tbsp of hemp or chia seeds

Directions

  • Layer pitted dates with a drizzle of sesame butter and strawberry preserves, nuts and seeds.

  • Eat fresh, or store in an air-tight container in the fridge for up to 5 days.
