If you love an elevated coffee situation, this fruit-free coffee smoothie is for you. 

Made with brewed coffee, frozen zucchini, coconut milk, cinnamon and maca powder - this smoothie isn’t just delicious, it’s also insanely good for you, too!

Here’s what I love about it - 

  • Frozen zucchini creates the creamiest smoothie texture, and it’s filled with vitamins, minerals, antioxidants and other healthy plant compounds. 

  • Maca, an adaptogenic plant, gives the body the ability to adapt to or resist what’s going on in and around it, like anxiety and stress. It also has tons of nutritional benefits, packing high levels or iron and iodine to promote healthy cells and boost metabolism, along with calcium amino acids and other vitamins and minerals. Taste-wise, it’s perfect for this blend, since it’s quite sweet and acts as a natural sweetener. 

  • Cinnamon offers a ton of health benefits; it has anti-viral, anti-bacterial and anti-fungal properties, can ease digestive discomfort, lower blood pressure, and has anti-inflammatory effects on the body as well. It also pairs perfectly with coffee, if you ask me.

  • Lastly, I make a big French press coffee every morning, and since I’m the only coffee drinker in the house half of it usually goes to waste. With this smoothie, I use the leftovers from my morning press, which means no waste! 

As you can see, for coffee, this blend packs a really packs healthy punch.

Fruit-Free Coffee Smoothie

Prep time: 2 minutes | Cook time: 1 minutes | Yields: 1 large serving or 2 small servings

Ingredients:

  • 1 cup brewed coffee

  • 1/2 cup coconut milk (if you like coconut flavor, use a canned version - half fat and full fat both work well)

  • 1/2 cup frozen zucchini

  • 1/2 cup ice

  • 1 tsp cinnamon powder

  • 1.5 tsp maca powder

  • Optional sweeteners - a few drops of liquid stevia (regular or vanilla flavored), a pitted date, a teaspoon of maple syrup, or a few slices of banana.

Directions

  • Combine all ingredients in a high speed blender. Begin to blend on a low speed, gradually increasing until the contents are completely smooth.
